Es originario de los pa\u00edses sudamericanos antiguamente incluidos en el Virreinato del Per\u00fa y est\u00e1 considerado como uno de los m\u00e1s populares y t\u00edpicos en algunos pa\u00edses de este continente.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter wp-image-908 size-full\" src=\"https:\/\/lapaz.bo\/turismo\/wp-content\/uploads\/2025\/09\/ANTICUCHO.jpg\" alt=\"\" width=\"609\" height=\"342\" srcset=\"https:\/\/lapaz.bo\/turismo\/wp-content\/uploads\/2025\/09\/ANTICUCHO.jpg 609w, https:\/\/lapaz.bo\/turismo\/wp-content\/uploads\/2025\/09\/ANTICUCHO-300x168.jpg 300w\" sizes=\"(max-width: 609px) 100vw, 609px\" \/><\/p>\n<p><strong>Historia:<\/strong><\/p>\n<p>La fecha de origen de este plato data del siglo XVI cuando los conquistadores espa\u00f1oles llegaron a lo que hoy es el Per\u00fa, m\u00e1s se cree que los antiguos Incas preparaban este plato con carne de llama cortada en trozos y combinado con algunas especias. En esta \u00e9poca la mayor\u00eda de los platos se preparaban con ingredientes tra\u00eddos de Europa es por eso que se usaba carne de res en lugar de la de llama.<\/p>\n<p>Los espa\u00f1oles trajeron consigo eslavos africanos los cuales se establecieron en Lima en la costa sur y fueron quienes adaptaron este plato a lo que ellos acostumbraban comer en sus tierras, en aquel tiempo los espa\u00f1oles desechaban todo tipo de viseras y se la daban a los esclavos como alimento y es as\u00ed que el coraz\u00f3n de la res era cortado y macerado con chicha o vinagre y poco despu\u00e9s finos palos de ca\u00f1a se a\u00f1adieron al platillo atravesando los cortes del coraz\u00f3n lo cual mejoraba la cocci\u00f3n y facilitaba la degustaci\u00f3n del mismo.<\/p>\n<p><strong>Ingredientes:<\/strong><\/p>\n<ul>\n<li>1 coraz\u00f3n de vaca fresco<\/li>\n<li>1 cucharada de ajo molido<\/li>\n<li>1 cucharada de vinagre de uva<\/li>\n<li>1 cucharada de perejil picado fino o molido<\/li>\n<li>2 cucharadas de jugo de lim\u00f3n (opcional)<\/li>\n<li>sal, or\u00e9gano, comino, pimienta al gusto<\/li>\n<li>10 papas cocidas grandes.<\/li>\n<li>10 trozos de yucas cocidas blanco.<\/li>\n<li>aceite<\/li>\n<li>aj\u00ed vaina rojo molido dulcE<\/li>\n<li>llajwa de man\u00ed molido y cocido<\/li>\n<li>una parrilla anticuchera o plancha.<\/li>\n<li>carb\u00f3n de madera parrillero<\/li>\n<\/ul>\n<p>palitos anticucheros<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Descripci\u00f3n: El anticucho es un plato criollo a base de carne ensartada en un pincho o brocheta que se cocina a la parrilla.
